The New:
I like fudge. I like homemade white chocolate peppermint fudge that only takes five ingredients even more, so that is exactly what I made. That's right, only FIVE ingredients. I get really excited when I come across these kinds of things on Pinterest, and I'm even more excited to share this recipe with you!
This is where I found the recipe.
Ingredients:
3 cups white chocolate chips/morsels
14 oz. can of sweetened condensed milk
1/2 tsp. peppermint extract
8 candy canes
2/3 cup mini semi-sweet chocolate chips
Directions:
1. Line an 8x8 pan with wax paper and set aside.
2. Crush candy canes into tiny pieces. I double bagged mine in zip lock bags and smashed it against the counter several times. Maybe not the most graceful way of doing this, but it sure was effective.
3. Melt white chocolate chips and sweetened condensed milk together, stirring constantly so it doesn't burn. Once melted, remove from heat.
4. Then stir in the peppermint extract and crushed candy canes. Pour the mixture into the 8x8 pan and make sure it spreads out evenly.
5. Spread mini chocolate chips over the top. If you do this quickly enough, they will melt and you can swirl them into the fudge using a knife. If you don't get to this step quick enough (because you were say, taking pictures of the process...) be sure to press the chocolate chips into the fudge so they don't fall off upon cooling. Next, let the fudge chill in the refrigerator for a few hours.
6. Once fudge is cooled, take it out of the pan and cut it into squares for serving.

The Verdict:
This recipe is one of those that I will likely be making every year from now on. It was super simple and very pepperminty! Plus, it's been father, boyfriend, and roommate approved, so I won't be stuck eating all 48 pieces by myself, although that wouldn't be terrible either...
